    Chocolate Stout Pudding

    So each year for Christmas my brother gets me two big bottles of Fort Collins Brewing Double Chocolate Stout. It's more of a dessert beer and I have a hard time finishing one when I open it. I found this as an alternative use and it's pretty damn tasty.
    If your significant other is a serious chocoholic, you could score some points with this one!

    Chocolate Stout Pudding
    serves 6

    4 TBSP cornstarch
    2 pinch sea salt
    1/3 cup sugar
    1/3 cup brown sugar
    1 cup whole milk
    1 cup heavy whipping cream
    1 cup stout beer*
    4 oz chocolate, chopped fine**
    1 tsp vanilla extract, preferably a bourbon based extract

    In a large bowl, mix cornstarch, sea salt and sugars with a whisk and place on top of a pot of boiling water. Slowly stir in milk, cream and beer, mixing until combined. Add chopped chocolate and stir occasionally until mixture is smooth, about 12-15 minutes total. Remove from heat and stir in vanilla. Pour the mixture into individual serving cups or large serving dish. Refrigerate for at least 4 hours or until chilled.

    *I used Fort Collins Brewing's Double Chocolate Stout. Other suggestions: Great Divide Chocolate Yeti or Young's Double Chocolate Stout.

    **recipe suggests dark or dark bittersweet chocolate, 70%-80% cocoa
